Menu Plan Monday - Dec. 31

I was reading in the Woman's Day magazine I got in my Christmas stocking and it offered this tip for cutting back on grocery expenses: Double the time between your grocery shopping trips, then stick to this schedule like glue. If you currently buy groceries twice a week, stretch it to once weekly. If you usually shop weekly, hold out for two weeks. If you normally spend around $100 a week, you won't spend $200 for two weeks. It will probably be more like $150.

I have a hard enough time planning a menu for just one week, BUT I'm going to try doing TWO weeks this time to see if this tip helps. It's guaranteed I'll be back to the store before two weeks is up. But for milk and produce items only, hopefully! Soo... here we go!

Dec. 31-Jan. 6
Monday - reuben sandwiches (finishing off Christmas corned beef)
Tuesday - best-ever meat loaf, cauliflower, apples
Wednesday - ham n white sauce over rice
Thursday - soup
Friday - bagels
Saturday - south-of-the-border enchiladas, oranges
Sunday - day off

Jan. 7-13
Monday - broccoli sausage breakfast bake
Tuesday - goulash, garlic bread, salad
Wednesday - sandwiches
Thursday - appetizer nite- summer sausage and crackers, cheesy spinach and artichoke dip
Friday - tacos, peaches
Saturday - celebrating 3 yr anniversary!
Sunday - day off

Dessert of the week: fruit custard (new recipe! I'll post it if it's good)

Family Focus Friday: Goals

With the end of the year rapidly approaching and a new year dawning, I thought I'd talk about GOALS this week and what goals we set for our family and children. A couple months ago I created a list of 101 Things to Do in 1001 Days and from that list, here are my family goals:

1. Finish reading A Mom After God's Own Heart. completed 11/1/07
2. Finish reading Shepherding a Child’s Heart.
3. Read/print all of “Raising Godly Tomatoes”. completed 11/27/07
4. Read Babywise.
5. Read Bringing Up Boys.
6. Finish watching parenting video and take notes.
7. Read a book to children every day.
8. Plan one fun family activity every week for 1 month.
9. Take vacation to Colorado.
10. Get new family photo.
11. Go to Vermont.
12. Go to Long Island.
13. Go camping.
14. Find play group for Eli.
15. Go an entire month without any TV.
16. Establish special time with each child daily.
17. Create list of specific rules for Eli. (will help us be consistent)
18. Go 24 hrs without computer.

And to that list I would add:
19. Create set "Bible time" with children.
20. Volunteer somewhere or do something for a neighbor as a family.

It's a good mix of parental goals, fun goals, and family challenges (no TV). But above all we always seek to achieve Biblical goals such as these:
* Salvation for children.
* For children to have the ability to live in fellowship with God to support daily growth in the spiritual life.
* For your children to have inner happiness, the peace of God that passes understanding, and great inner joy that doesn't depend on the details of life.
* For your children to have respect for authority.
* Teaching your children about the production of divine good, the lifelong production of "gold, silver, and precious stones" rather than "wood, hay and stubble". (this includes a life of witnessing)

I'm all about having lists of goals. Long-term goals, short-term goals. I love lists, and setting goals focuses your life on having purpose and being productive with the time and gifts God has given us.

Our Christmas

Thought I'd take a little time to share about our Christmas celebrations the last two days. My Christmas Eve plans were to read the Christmas story from the Bible by the tree at Eli's bedtime, sing some carols by the piano, put Eli to bed, and then watch The Nativity Story movie. Those were the plans. BUT Eli is a toddler. He does not know how to sit still well, except up in the rocking chair in his room at bedtime. So bringing him downstairs by the tree threw things off and he didn't want to sit still for the Bible reading. And he was about equally excited about the carols. We ended up giving up in the middle of the songs and just putting him to bed. Kevin and I watched The Nativity Story, and it was very good and we've already recommended it to our families. It was a good Christmas Eve but not quite what I had imagined. Is it ever?

Christmas Day we got up around 7:00am. I got the breakfast coffee cake going and then we opened stockings. We ate breakfast, cleaned up, then opened presents. Eli had a great time and actually seemed to understand the idea of unwrapping something to see what was inside. He was a great helper. And his favorite toys are his new tool set (first tool set!) and magnetic farm set for the fridge. The rest of the day we just hung around the house, relaxing. It was a quiet day. I actually wasn't feeling the best so it was good to not have a busy schedule. For Christmas dinner we had corned beef, cheesy broccoli, rolls, and fruit salad. 'Twas yummy! =)

Okay, so there's not much to tell about our Christmas, but I thought I'd share anyway in case you were wondering. Now here are a few pictures... Enjoy!

Overwhelmed.

Here comes an honest, this-is-life blog.... I know it's Christmastime and everything's supposed to be all hunky-dory and cheerful and I wish it was, but I am overwhelmed. Ever since we got back from vacation last week, Eli has been handful! Very disobedient, overreacting about everything, and fussing like crazy. Crabbing at meal times, pushing my hand away, hitting back at me, not stopping back when he's doing something he shouldn't, not listening. He's having tantrums about everything and nothing multiple times a day when normally he'd listen to us when we just verbally correct him and tantrums aren't a big issue. Thankfully, Kevin's been home so we can help each other out. But we are exhausted and frustrated and just don't know what's going on. He's working on molars. It's been a couple months and two are almost all the way in and we haven't any problems so far. And a third one is still just poking through. So I don't know if it's his teeth bothering him? Or could it be something to do with having been on vacation? I'm kind of an emotional wreck and feeling very overwhelmed at the idea of baby #2 coming in about 8 weeks. I just can't imagine adding another bundle to the house right now when Eli is going crazy like this! Any suggestions at all??

Family Focus Friday: Jesus vs. Santa

I'm still tired from vacation and just having a hard time getting back into routine here. I didn't know what to post for a topic this week, even though next week is Christmas! So I thought I'd just share this...

Santa lives at the North Pole.
JESUS is everywhere.

Santa rides in a sleigh.
JESUS rides on the wind and walks on the water.

Santa comes but once a year.
JESUS is an ever present help.

Santa fills your stockings with goodies.
JESUS supplies all your needs.

Santa comes down your chimney uninvited.
JESUS stands at your door and knocks, and then enters your heart when invited.

You have to wait in line to see Santa.
JESUS is as close as the mention of His name.

Santa lets you sit on his lap.
JESUS lets you rest in His arms.

Santa doesn't know your name, all he can say is "Hi little boy or girl, what's your name?"
JESUS knew your name before you did.

Not only does He know your name,
He knows your address too.
He knows your history and future and
He even knows how many hairs are on your head.

Santa has a belly like a bowl full of jelly.
JESUS has a heart full of love.

All Santa can offer is HO HO HO.
JESUS offers Health, Help and Hope.

Santa says "You better not cry."
JESUS says "Cast all your cares on me for I care for you."

Santa's little helpers make toys.
JESUS makes new life, mends wounded hearts, repairs broken homes and builds mansions.

Santa may make you chuckle but
JESUS gives you joy that is your strength.

While Santa puts gifts under your tree.
JESUS became our gift and died on a tree.
Yes, from sin He sets us free!

The remainder of our Christmas is actually going to be pretty quiet for us. We've already flown home and back, and that seems kind of weird. But we're looking forward to just relaxing and celebrating as a family instead of being busy busy. Saturday is the Christmas program at church. Christmas Eve at Eli's bedtime we'll get him into his jammies, turn off the lights, bring him back downstairs by the Christmas tree, read the Christmas story out of the Bible, and I'll play some Christmas hymns on the piano before putting the little one to bed. Hopefully Eli will comply with all of this because I'm really looking forward to it. Then on Christmas Day we'll get up, open our stockings and presents, having some sort of special breakfast, relax for the day, and have a nice dinner. So that's our Christmas. Simple and relaxing, yet very special! What are you most looking forward to? What are your plans/traditions for Christmas Eve and Christmas Day?

We're Back!

From our vacation to Iowa, that is. We went home early this year to actually avoid Christmas celebrations and trying to plan so much into just one week. We just wanted to visit, so that's what we did. It was a packed a week, and even though we didn't get to see nearly as many friends as we would have liked I still think we over-extended ourselves. It was very tiring going here, there, and everywhere and packing up our gear twice every single day. We spent the mornings with my parents, afternoons with Kevin's family (30 minute drive), and then back to my parent's again for bedtime. Just doing that meant packing up the pack n play, blanket, video monitor, booster seat, toy basket, snacks, and diaper bag every day. Ugh! Needless to say, with all the running around we did and new people and places, Eli missed at least one nap almost every day. But he was really good about it anyway. We were able to visit Kevin's sister and her husband in Minnesota (4.5 hr. drive) and stay with them over the weekend. And while we were up in that area we visited with a crew of all my college friends (and their babies). It really was a great week seeing family and friends, just exhausting. And that's not including the flights it took to get there and back. We got Eli his own seat this time because he's squirmy and strong, doesn't sit in our lap well, and the last time I tried it was miserable. He did pretty good, but both going and coming we had at least one big tantrum and it was frustrating. It's those moments when I really see how much work we have to do yet in parenting! So I'm VERY GLAD we're moving back next year and we won't have to make those big trips anymore!

It's good to be back home! Kevin still had today off yet so we could just relax and recoop, for the most part. Still have errands to do though. Gotta feed the family! And with that being said, I should get going, but wanted to let y'all know I was back! I missed you!

Family Focus Friday: 12 Days of Christmas

I found THIS WEBSITE a couple weeks ago that explains that symbols of "The 12 Days of Christmas" song. For each day there is scripture, a book/story to read, craft, family discussion topic, song, and prayer, along with a part of the Christmas alphabet. It's a really neat website with great ideas! You should check it out! But for now I'll share the what the symbols mean...

Day 1 - Partridge In A Pear Tree - Christ who died on the Cross for our sins. A partridge often feigns injury to draw attention to herself and away from her young to protect them from danger. Because of its self sacrifice the partridge was used to represent Christ.
Day 2 - 2 Turtle Doves - Old and New Testaments. Because they have one mate for life the turtle doves represent enduring relationships, such as the unbreakable bond between the Old and New Testaments.
Day 3 - 3 French Hens - Holy Trinity. Father, Son and Holy Spirit.
Day 4 - 4 Calling Birds- The four Gospels. Matthew, Mark, Luke, and John
Day 5 - 5 Golden Rings - The first five books of the Old Testament, known as the Torah.
Day 6 - 6 Geese a Laying - The six days of Creation. (eggs represent new life)
Day 7 - 7 Swans a Swimming - The seven gifts of the Holy Spirit: prophecy, ministry, teaching, exhortation, giving, leading, and compassion (Romans 12:6-8; cf. 1 Corinthians 12:8-11)
Day 8 - 8 Maids a Milking - The eight Beatitudes: 1) Blessed are the poor in spirit, 2) those who mourn, 3) the meek, 4) those who hunger and thirst for righteousness, 5) the merciful, 6) the pure in heart, 7) the peacemakers, 8) those who are persecuted for righteousness' sake. (Matthew 5:3-10)
Day 9 - 9 Ladies Dancing - The nine Fruit of the Spirit: love, joy, peace, patience, kindness, generosity, faithfulness, gentleness, and self-control. (Galatians 5:22)
Day 10 - 10 Lords a Leaping - The 10 Commandments
Day 11 - 11 Pipers Piping - The eleven disciples who remained faithful to Christ.
Day 12 - 12 Drummers Drumming - The twelve points of doctrine in the Apostles' Creed:
1. I believe in God, the Father Almighty, Creator of heaven and earth,
2. And in Jesus Christ, his only begotten Son, our Lord,
3. Who was conceived by the Holy Spirit, born of the Virgin Mary,
4. Suffered under Pontius Pilate, was crucified, dead and buried; He descended into hell.
5. The third day he rose again from the dead;
6. He ascended into heaven, and sits at the right hand of God the Father Almighty.
7. From there he shall come to judge the quick and the dead.

Thankful Thursday

It's kind of been a hard week. I thought he'd be done but Kevin's still working nights again this week (12-hr shift) which complicates the schedule and makes for really long days for me. It's cold, and we can't get out much except for shopping errands which just mean spending money. I've been frustrated and losing my temper lately, and I'm just in need of a good break! But today I set aside all of that and I choose to be thankful. Because that's what God asks of me. "Be joyful always, pray continuously, give thanks in all circumstances, for this is God's will for you in Christ Jesus." 1 Thes. 5:16

So today, Lord, I thank you.

Thank you for my beautiful son. I may lose my temper and get so frustrated and wish that he would just go away for a minute so I can do what I need to do. But the truth is, I love him so dearly. And I miss him when he's gone. He's such a joy and blessing that I wouldn't trade for the world.

Thank you for my loving husband. He may not always be there when I need him, but he's there when it matters most. Always. I can count on him. And I can trust him, with my whole heart. He makes me laugh and smile, and what we share together as a family is beautiful.

Thank you for my family. It's hard being away, but it creates such joy and anticipation for when we're home. It adds a special value to pictures, emails, and phone calls. It makes you appreciate the little things all the more.

Thank you for the cold weather. I hate it. BUT it encourages us to stop being so busy busy and just be together as a family, to find warmth and coziness, to relax. To enjoy the simple things like games, books, music... and cookies!

Thank you for the joyful holiday season as we prepare our homes and hearts for the arrival of Christ the King, Your Son! For traditions, symbols, hymns, and a spirit in the air that unites us all.

Thank you for new life. For the child I carry within. For the birth of my friend Amy's baby. For the new life you've created in me every day through our Lord and Savior Jesus Christ. For forgiveness and grace and mercy.

Thank you, my Father. Thank you.

Menu Plan Monday - Dec. 3

Well, I don't really know what Hubby's work schedule is this week. We're thinking he's done with night shift, so we'll just plan as though it's going to be a normal week!

Monday - French dip sandwiches, green beans, grapes

Tuesday - hot dogs, potato salad, apples

Wednesday - Stouffer's lasagna, garlic bread, salad

Thursday - breakfast nite- breakfast burritos, fruit cocktail

Friday - Zuppa Toscana Soup, oranges

Saturday - Chicken Divan, fruit salad

Sunday - day off

Dessert of the week:

Nannie's Blackberry Cobbler (SO EASY!)

1 bag of frozen blackberries (or a couple cups of fresh)
1 refrigerated pie crust
2 Tbl corn starch
Sugar to taste (probably something like 1 cup?)

In a bowl combine, blackberries, cornstarch, and sugar. Transfer to baking dish. Lay pie crust on top (trimming to size of dish) and make vent slots.

Bake at 350 for 30 minutes? (check baking directions on pie crust package)

Psalm 95 (v. 1-7)

Come, let us sing for joy to the Lord;
let us shout aloud to the Rock of our salvation.
Let us come before him with thanksgiving
and extol him with music and song.

For the Lord is the great God,
the great King above all gods.
In his hand are the depths of the earth,
and the mountain peaks belong to him.
The sea is his, for he made it,
and his lands formed the dry land.

Come, let us bow down in worship,
let us kneel before the Lord our Maker;
for he is our God
and we are the people of his pasture,
the flock under his care.
