I know it's summer and I've been making soups, but whatever, it's what sounded good!
Monday - chili
Tuesday - spaghetti, garlic bread
Wednesday - 4th of July!! grilling with friends. I'll be bringing fruit and dip (recipe below, thanks Rae Lynne! can't wait to try it!)
Thursday - appetizer nite--enchilada rolls
Friday - birthday party at a friends'
Saturday - pizza on the grill
Sunday - loaded baked potatoes
Recipe: FRUIT DIP
1 1oz container of Instant Sugar-Free Fat Free Pudding - your flavor choice (suggested: white chocolate, cheesecake, chocolate)
1 6oz container low-fat yogurt - your flavor choice - I usually use raspberry or strawberry - but you can use pretty much anything that appeals to your tastebuds!!
1 container fat-free cool whip, nice and soft
Mix all 3 ingredients together (the cool whip container is a perfect size to make the dip). Best served chilled w/ cut fruit. :)

Sounds like a fun week for you! I've been having soup, too, for lunch. When people think it's odd because of summer, it makes me wonder. All of our other meals (mostly) we also eat hot! ;)
