Last week I tried Makeover Greek Spaghetti and it turned out pretty good. Maybe a 7 on a scale of 10, and Eli loved it too. However it took me forever to make!! The recipe said 30 minutes prep, 25 minutes cook, but it took me a good hour of preparation! Cook the chicken, chop the chicken, cook the spaghetti noodles, chop the celery, onion, and green pepper, make the white sauce, throw everything together, THEN cook it! If I do this recipe again, I will definitely do some of the prep ahead of time like cooking and chopping the chicken, and chopping the vegetables. It also made a TON. I halved the recipe and still filled a 9x13 pan, though I admit I didn't really measure a lot of the ingredients, so that could be a factor too. But there you have it! A new recipe to try if you'd like!
Now this week we're going for simple and inexpensive...
Monday - turkey/rice soup
Tuesday - loaded baked potatoes
Wednesday- breakfast for dinner- Breakfast Casserole
Thursday - appetizer nite- Cheesy Spinach and Artichoke Dip
Friday - spaghetti
Saturday - Panera Bread (for hubby)
Sunday - pork chops, tator tots, applesauce
Dessert of the week - Pecan Pie
