Answer Me This: Crockpot Recipes


I'm not very good at the crockpot.  If it's supposed to cook for 8hrs and I want it done at 6pm, that means it needs to go in by 10am.  And by 10am I'm well into my day and I plumb forget to get the darn thing started and it's already 4pm and then I have to scramble around to get an alternate dinner prepared.  But I want to get better.  I love the feeling of dinner being "done" already in the morning!  Plus, it's easy for my little girl to throw things in there for me and help!  Now that Eli's first year in AWANA is starting up, meaning early dinner on Wednesday nights, I'm thinking of doing more crockpot meals.  I have a crockpot cookbook, but it doesn't have pictures so things don't look very appealing. So what are your favorite meals and recipes for the crockpot??

you can speed things up by cooking the meat before hand- that way it can just break down and become more tender while its cooking with everything else.

Shredded Mexican Chicken

Put 3-4 (or more) chicken breasts in the crock pot. Mix 1 packet of burrito seasoning with 1 cup of chicken broth. Pour over the chicken. Cook on low for 8 hours. Add more broth if it looks dry. Shred with 2 forks (leave broth in the pot, it will make for very moist and tasty shredded chicken) and use with enchiladas, burritos, whatever. We've done this with our own mix of seasonings for sandwiches and it turns out great.

We always do pulled pork/beef in the crockpot. BBQ sandwiches are so quick and sometimes you can even buy the meat at the supermarket already pulled so you can just warm it in the crock pot. :)

That's how I cook chili sometimes.

And I have a few friends that baked pizza or baked spaghetti in the crock pot. :)

There is a whole section on crock pot recipes. This is where I started with my crock pot cooking. Now I just take whatever recipe I am using and adjust it to use in the crock pot. There is not hardly a day that I don't use my crock pot. I love it. Usually if it is something that only has to cook for 4 or 5 hrs, I get it all ready to cook that morning and then when I am fixing lunch or cleaning up after lunch, I stick the crock in the holder and turn it on. Then it is usually done by 5 or 6....and I also have one crock pot with a warm setting...I can turn it on warm when it is done and just let it sit there until ready to serve.

And I love that feeling also...I seem to get more done through out the day if my supper is already done.. :)

something that takes 8 hours on low will cook in an afternoon on high!
I have SO many great recipes that it would take me all day to write them down. I have the book called Company's Coming Slow Cooker Recipes and every single thing I have ever cooked from it has been wonderful! My favorite out of that book is called Snappy Chicken. I use white meat rather than thighs and then I take thte chicken out about an hour before and add rice to the broth. SO good!
I never cook the meat ahead because that sounds like a lot of extra work to me, but for beef stew you can cut everything up the night before and then just refresh the water it is in in the morning. My favorite winter appliance :)

Oh, we've had that Shredded Mexican Chicken. DELICIOUS! It's the way we most enjoy tacos now. Sometimes we use half the chicken, adding in black beans & some corn. SO good!

We also really like "Greek Chicken".
It's basically a bound of boneless skinless chicken breasts, potatoes, carrots, lemon-pepper seasoning, and chicken broth.

Place cut/peeled potatoes on bottom of crockpot (after spraying w/ cooking spray, for easier clean up).
Place chicken on top of potatoes.
Pour enough chicken broth over both to touch bottom of chicken.
Add diced carrots (we often add green beans, too).
Sprinkle w/ lemon-pepper seasoning (I use the salt-free McCormick)

It's tasty and the food gets So tender! I usually cook it on low for about 6 hours.

I LOVE to use the crockpot! It is one of my favorite kitchen tools. The best thing you can do is make sure you have everything ready to put in the night before. Make sure the meat is out of the freezer and thawed. Cut up any veggies. Put all of your spices out on the counter and then you just have to assemble. It might be worth it to you to buy a programmable crockpot. they have a start and end time built in so then it turns on when it's time to start cooking and then shuts off when it's done! A good Sunday lunch crock-pot recipe is to get a roast and just put it in the crock pot on high(depending on how hot yours gets) and let it cook all night. The next morning, before Church, cut up some carrots and potatoes and add. Cover and cook on low while you go to Church. When you come home, take out the roast and the veggies and add a package of gravy mix. Put on some rice, and there you go!

Other recipes on the crock pot, if it calls for low-heat cooking, put it on high and watch it. Sometimes they will be ready in two hours. :)

well lets try this again. get some stew meat and beef broth. add seasonings the way you like say like garlic salt and rosemary I also add a touch of white wine dressing and mix the broth till you like it. then add the beef. cook all day and right before supper time is near pour the crock pot of beef and broth into a big pot and heat add reams egg noodles and cook for 20 minutes. while that is cooking make mashed potatoes and cresent rolls. All three of my boys love this and usually come back for seconds amd thirds if you need help with it call me 402 414 1612

I'm using my crockpot today, actually! It's currently simmering an easy-peasy recipe for beef stroganoff.

Put the following ingredients into the pot and stir. Cook on low heat for 8 hours.
1 lb stew meat
2 cans cream of mushroom soup
1 envelope onion soup mix

Before serving, stir in 4oz of cream cheese (or sour cream, if you prefer. I like to spoon it over wide egg noodles, but rice would work, too. My fave veggie to pair with this is simple, baked asparagus with a sauce made from a Tbsp of butter, a Tbsp of soy sauce and a Tsp of Balsamic vinegar. Yummy!!

I'm very late to the party, but my favorite thing to do in the crockpot is a beef roast. This is crazy easy and SO GOOD. I have an entire family in Norway with American crock pots rigged up with Norwegian electrical plugs, because the family for whom I was a nanny loved it so much, they brought crock pots home as Christmas presents, simply for this recipe.

All you do is sear a chunk of beef (I use whatever cut was on sale that week, no matter how cheap. It's going to be tender from all the cooking.) So you sear it on all sides to keep the juice in, and throw it in the crock. Throw in two cans of cream of mushroom soup, a large onion chopped, one envelope of Lipton onion soup dry mix, some peeled carrots cut in thirds (or a package of baby carrots), and quartered potatoes, skins still on and scrubbed. (eights if they are really large.) YOU DON'T NEED WATER. The juice from the meat and veg is plenty of moisture. Just cook it on low all day. I don't know the exact time, I just stick it in first thing in the morning as I'm eating breakfast, and it's ready for five o'clock or so.

The crockpot is a lifesaver.
